Though we had a long weekend, I’m still pretty proud that I am posting this entry before Midnight before my shopping day!! I got inspired after having an organization and menu planning discussion at the Memorial Day BBQ we went to this afternoon!
I am also going to try to be a bit more “snacky” about my Breakfast and Lunches – eating only when I get hungry and keeping to snack sized items. Dinners will be planned as usual.
Monday – Memorial Day BBQ
Tuesday – Crock Pot Thai Chicken Thighs, over Coconut Jasmine Rice, with Edamame
Wednesday – Leftover Chicken
Thursday – Pork tenderloin, Cheesy potatoes, Broccoli
Friday – Leftover Pork
Saturday – Bacon, egg & hash brown burritos
Sunday – Leftover burritos
Bagel & cream cheese
Toaster waffle w/PB
